The Institute is linking with the Wynn Food and Beverage Academy \u2013 an in-house educational unit of integrated resort operator Wynn Macau Ltd \u2013 to host a series of master class sessions, each promoting a particular Chinese regional cuisine.<\/p>\n<p>The series covers China from north to south, and from east to west. The country\u2019s abundance of gastronomic delicacies is featured in a total of 11 master classes that highlight a number of China\u2019s culinary traditions, with a focus on the so-called \u201cEight Great Cuisines of China\u201d.<\/p>\n<p>The master classes are open to the general public. They are linked to the \u201cWynn Guest Chef Series\u201d by Wynn Macau Ltd. Under the initiative, the integrated resort operator is bringing to Macao leading chefs from across the country, to present special menus at restaurants in the Wynn Macau and Wynn Palace Cotai properties. While in town, the chefs are also devoting time to sharing their culinary expertise with local students.<\/p>\n<p>The master class series at IFTM began on 1 April, with a workshop on Sichuan cuisine, held at the Mong-H\u00e1 Campus. It was led by Chef Xu Mingqiang from Ba Shufeng Yue, a popular restaurant specialised in Sichuan cuisine, located in the city of Shenzhen in Guangdong Province. Attendees included a number of chefs enrolled in the Wynn Food and Beverage Academy, as well as students and staff from IFTM.<\/p>\n<p>It was Chef Xu\u2019s first time in Macao. He praised the workshop as a \u201cgreat chance\u201d to promote \u201cauthentic Sichuan flavours\u201d to the city\u2019s chefs and future industry professionals. He was impressed by the facilities at IFTM, particularly the Institute\u2019s Demo Kitchen: Chef Xu said the room \u2013 recently revamped \u2013 was nicely equipped \u201cboth for cooking and teaching\u201d, with cameras to film sessions, and large video screens allowing for all participants to see in detail what he was preparing at his workstation.<\/p>\n<p>The workshop on Sichuan cuisine was well attended, and the audience raised a lot of questions and presented a lot of opinions to Chef Xu. Among those attending were staff from the IFTM Educational Restaurant. \u201cThough our main focus is on Macanese cuisine, getting to know about various cuisines is positive for us,\u201d a staff member said.<\/p>\n<p>The master class series marks the temporary \u2018return\u2019 to IFTM of Mr. David Wong Yuk Shan, former executive assistant manager for food and beverage at the Institute. He is now Executive Director at the Wynn Food and Beverage Academy.<\/p>\n<p>\u201cThe Academy recruits existing chefs, to help them enhance their skills,\u201d he says. \u201cWhen we cooperate with higher education institutes, our priority is to partner with those offering culinary courses.\u201d That is the case of IFTM: it has a Bachelor\u2019s Degree Programme in Culinary Arts Management.<\/p>\n<p>The Wynn Food and Beverage Academy was founded in 2009. Since its establishment, it has invested in promoting culinary traditions, while stimulating innovation in food and beverage culture.<\/p>\n<p>Mr. Wong points out that the Wynn group and IFTM have a long-lasting partnership. It includes making available at the integrated resort operator, vacancies for IFTM students to complete their mandatory Year 3 curricular internship.
