Chen, visited Mesa, a contemporary Portuguese restaurant at Grand Lisboa Palace Resort. The Chef de Cuisine, Mr. Andr\u00e9 Filipe Ferreira Lai demonstrated Bacalhau \u00e0 Br\u00e1s and Kumquat, two signature dishes that exemplified the tradition and innovation of Portuguese cuisine. In addition, he shared his cooking industry expertise and background knowledge of Portuguese cuisine. The fourth-year culinary students had a wonderful time attempting to make the Kumquat globe with chef Andr\u00e9.
