Professor DuBois first came to Chinese in the early 1990s, and he is now a professor at Beijing Normal University, teaches Chinese. His latest book, "China in Seven Banquets: A Flavourful History" combines his training as a historian and his passion as a cook.
On March 27, 2025, the Macao University of Tourism (UTM) was pleased to welcome Professor DuBois, who shared his insights on the intersection of history and food with our International Food and Beverage Management master's students and Year Four Culinary Arts Management students. The session was conducted in both English and Mandarin, enriching the learning experience for all participants. Professor DuBois encouraged students to embark on an enlightening journey of "searching for taste," traversing both time and space to explore the rich culinary heritage of China across various periods. He emphasized the importance of uncovering the roots of delicious food, pursuing traditional flavors and cooking methods, and rediscovering numerous cookbooks that embody the essence of ancient wisdom. Professor DuBois highlighted the significance of exploring and modernizing these time-honored delicacies.
He discussed the evolution of Chinese cuisine's flavors from antiquity to the present, emphasizing the complex interplay of various factors, including ingredients, climate, demographics, and social and economic development. He explained that as time progresses and history and culture evolve, everything is subject to change. Consequently, rather than striving for an ideal standard, it is more valuable to appreciate the unique interpretations of deliciousness that arise from each transformation.
Professor DuBois offered unique insights into the development trends of food and consumer tastes. He noted that our perception of deliciousness is often shaped by external frameworks, with consumers making food choices and providing feedback influenced by unseen factors. Additionally, he shared his experiences in learning cooking techniques and conducting fieldwork in Sichuan, which greatly expanded our horizons and provided valuable knowledge to the students. After engaging in brainstorming, students participated in a lively exchange and discussion with Professor DuBois.
