Portuguese Winemaker Visits UTM to Share Insights on the Douro Valley Region
On September 20, Mr. Freddy Cudell Tenreiro, winemaker from Quinta do Cume, a renowned winery in Portugal's Douro Valley, visited the Macao University of Tourism (UTM) to share his expertise with over twenty students. He introduced the unique terroir of the Douro region, grape cultivation techniques, and the winemaking process.
The event was organized and hosted by Lecturer Mr. Oscar Man Cheng Ho from the Faculty of Innovative Hospitality Management. Mr. Tenreiro explained how his winery adopts sustainable practices to grow grapes, aiming to preserve the ecological balance of the vineyard soil. He also highlighted the traditional method of grape stomping by foot, demonstrating how it positively influences the color and tannin structure of red wines. Under Mr. Tenreiro's guidance, students had the rare opportunity to taste several wines he personally crafted, gaining a deeper understanding of the Douro Valley's wine styles and production methods — an invaluable learning experience.
