It was our distinct honour to welcome Chef Canico De Abreu David Alexandre, Chef de Cuisine at Galaxy Entertainment Group, for an inspiring masterclass that brought the vibrant, bold flavours of Modern Portuguese cuisine to life.
Adding further depth to the session, our valued industry partners—Mr. Daniel Wong (AVP – F&B Culinary), Chef Pakman Chan (Executive Sous Chef), and Chef Nicole Yiu (Chef Instructor)—offered students an invaluable glimpse into the operational realities of professional kitchens. They emphasized that managing food and beverage operations is among the most demanding, complex, yet profoundly rewarding disciplines in modern commerce. Excelling in this field requires harmonizing the sensitivity of an artist, the precision of an engineer, the vigilance of an accountant, and the empathy of an educator. Those who master the synergy of kitchen execution, cost control, sustainability, service storytelling, and compassionate leadership will not only navigate the industry’s relentless pace, but also shape its future.
Tailored exclusively for our Year 3 Culinary Arts Management (CAM) students, this session reflected a genuine commitment to nurturing young talent. We extend our heartfelt gratitude to the entire culinary and management team for generously sharing their time, expertise, and passion to inspire the next generation of hospitality leaders.
