On March 24 and 26, 2025, Mr. Benjamin Chen and Ms. Doris Kuok facilitated the "Explore Your Career at SJM – Culinary Art Management" event for Macao University of Tourism (UTM), first-year Culinary Art Management students. Hosted at the Grand Lisboa Palace (GLP), the program provided students with invaluable insights into the industry as well as practical exposure to professional kitchen operations. This initiative highlights SJM's commitment to nurturing emerging talent by connecting academic knowledge with real-world experience. Through immersive workshops and mentorship opportunities, SJM aims to inspire and prepare the next generation of culinary professionals in Macau.
Interactive Sessions with Industry Experts
The event commenced with a career talk led by two experienced chefs from SJM, who discussed their professional trajectories, industry trends, and potential career opportunities within the culinary arts. Students were provided with a comprehensive overview of SJM's operations and the various pathways available in the food and beverage sector. A dynamic Q&A session enabled participants to interact directly with the chefs, facilitating meaningful discussions regarding career development.
Behind-the-Scenes Kitchen Tours & Culinary Demonstrations
Following the talk, students participated in a guided kitchen site visit, during which they explored key areas such as the Pastry Kitchen, Commissary Kitchens (Cold & Hot), and the Back-of-House of staff canteen (Stewarding/Store Room). This behind-the-scenes tour provided an insightful glimpse into the precision and collaboration necessary for successful high-volume culinary operations.
The highlight of the event was a live culinary demonstration conducted by SJM’s chefs in the open kitchen area of the Bamboo Hut. Students had the opportunity to observe expert techniques and innovative cooking methods. The session concluded with a tour of the Grand Lisboa Palace, showcasing the integrated resort's world-class facilities.
