Students from Macao University of Tourism's Tourism Business Management (旅遊企業管理理學士學位) and Hotel Management programmes (酒店管理理學士學位) have completed an innovative industry project with local Macanese food establishment Siu Saam Baa 小三巴. Under the guidance of Dr. Fernando Lourenco (羅導謙博士), the project focused on developing strategies to strengthen the brand's cultural identity and create scalable expansion models for the mainland China market.
The project required students to conduct in-depth research into Macanese culture and cuisine, identifying key elements that could be incorporated into Siu Saam Baa's brand identity, product offerings, and customer experience. Building on this research, students developed comprehensive proposals to position Macanese food not just as a tourist experience in Macao, but as a viable everyday dining option throughout China.
Founder Adelino da Conceição de Assis (司特澳) noted: "The students presented thoughtful approaches to make our authentic Macanese flavors appealing to Chinese consumers nationwide. Their proposals balanced cultural preservation with practical business scalability."
Students analyzed successful food businesses that have expanded while maintaining cultural authenticity, then applied these insights to Siu Saam Baa. Their final proposals included detailed operational models, marketing strategies, and expansion frameworks designed to introduce Macanese cuisine to new markets across China.
"This project gave students real-world experience in taking a cultural food concept to mass markets," said Dr. Lourenco. "Their work demonstrates how Macanese cuisine could become part of China's diverse culinary landscape."
